Ingredients for the hot and sweet peppered chicken recipe:
- 1 tablespoon oil
- 2 chicken breast fillets, cut into strips
- 2 1/2 teaspoons seasoned peppercorns
- 1 onion, cut into wedges
- 1 red capsicum, cut into thin strips
- 2 tablespoons oyster sauce
- 1 teaspoon soy sauce
- 1 teaspoon sugar
Directions for the hot and sweet peppered chicken recipe:
1. Heat a wok over very high heat, add some oil and swirl it to coat the base and side of the wok. Then add all the chicken strips and stir-fry it for about 2 or 3 minutes, or until they become brown.
2. Add the peppercorns and stir-fry it until they become fragrant. Then add the onion and the capsicum and stir-fry them for about 2 minutes, or until the vegetables have become slightly soften.
3. After that, reduce the heat and stir in the oyster sauce, the soy and the sugar. Toss them well until they thoroughly combine before serving.

Note:
Seasoned peppercorns are available in the herb and spice section of large supermarkets.
Add the strips of chicken breast to the wok and stir-fry until browned
Add the onion and capsicum and stir-fry until they have softened slightly.
Add the oyster sauce, soy sauce and sugar to the stir-fry and toss through.
