Serves 4
Ingredients:
1 tablespoon oil
700 g (1lb 6 oz.) chicken mince
2 cloves garlic, chopped
100 g (3 1/2 oz.) can water chestnuts, chopped
1 1/2 tablespoons oyster sauce
3 teaspoons soy sauce
1 teaspoon sugar
5 spring onions, sliced
4-5 lettuce leaves
Directions:
1. Heat a wok over very high heat, add some oil and swirl it to coat the base and side of the wok. Add all the chicken mince and the garlic and stir-fry them for about 3-4 minutes, or until they become browned and well cooked through, breaking up any lumps with a spoon. Pour off if there is any excess liquid.
2. Reduce the heat a bit and add the water chestnuts, the oyster sauce, the soy sauce, the sugar and the spring onion.
3. Trim the lettuce leaves around all the edges to form each one into a cup shape. Divide all the chicken mixture among the lettuce cups and serve with extra oyster sauce.

1. Stir-fry all the chicken mince, in the mean time breaking up any lumps with the back of a spoon.
2. Add the water chestnuts, the oyster sauce, the soy sauce, the sugar and the spring onion.
4. Trim all the edges of the lettuce leaves and form them into cup shapes to hold the mince.
